I think these muffins were my favorite product of the Apple Challenge (you can read about that here)! They were super yummy and the strudel on top made them almost like dessert. Oh but that didn't stop me from eating them for breakfast:) Hey, they have wheat germ in them to make them healthy!
Ingredients
Directions:
1. Cut your apples up into small pieces. As small as you can get them without going crazy!
If you have a spiffy apple slicer like mine, use it! It's a HUGE time saver!
2. Mix the dry ingredients together in a small bowl (not pictured because I'm a scatterbrained baker).
3. In a large bowl combine the wet ingredients.
4. Mix the apples and dry ingredients into the large bowl and mix well!
5. Spoon into greased or paper lined muffin pan (excuse my hideous muffin pan. It's why I always use liners)!
6. Mix the Strudel ingredients together until crumbly and then sprinkle evenly over the tops of the muffins.
Like this!
Bake at 350 for 20-25 minutes or until knife inserted in the center comes out clean!
